Salt Lake City, UT – Concerns about the environment and hard economic times have sparked a boom in gardening. Increasingly, Americans are interested in growing their own vegetables at home or through cooperative community gardens. Last summer, the Salt Lake City School District had greenhouses installed at almost a dozen elementary and intermediate schools for introducing a new garden-based curriculum. But, as Ross Chambless reports, many of the schools aren't quite sure what to do with them.
